I got this recipe from Corner’s Cafe. This is super easy and kids and adults all like it. When I first tried out the recipe, I found it’s too buttery taste and too much sugar crystalization, which is not really big deal but I just like mine a bit more shiny look. So when I made it again for Chinese New Year, I cut down butter and sugar, increased the amount of honey and also add a pinch of salt for more flavor– the result is a more shiny look, crunchy, sweet and yet a hint of salty flavor… very good!
Honey Joys Recipes– Revised:
3 tbsp butter (original recipe uses 1/3 cup)
1/4 cup sugar (original recipe uses 1/3 cup)
2 tbsp honey (original recipe uses 1 tbsp)
pinch of salt
4 cups original cornflakes
- Preheat oven to 300° F. Place cornflakes in a deep tray. Line a baking tray with lots of mini baking cups.
- Melt butter, sugar, honey and salt in saucepan on low heat until sugar dissolves and mixture becomes frothy.
- Pour butter mixture gradually to the cornflakes. Stir quickly and gently to coat evenly.
- Spoon coated cornflakes into mini baking cups and bake for 10 minutes. Let cool on the tray then store them in air tight container.
