Honey Joys

I got this recipe from Corner’s Cafe. This is super easy and kids and adults all like it. When I first tried out the recipe, I found it’s too buttery taste and too much sugar crystalization, which is not really big deal but I just like mine a bit more shiny look. So when I made it again for Chinese New Year, I cut down butter and sugar, increased the amount of honey and also add a pinch of salt for more flavor– the result is a more shiny look, crunchy, sweet and yet a hint of salty flavor… very good!

Honey Joys Recipes– Revised:

3 tbsp butter (original recipe uses 1/3 cup)
1/4 cup sugar (original recipe uses 1/3 cup)
2 tbsp honey (original recipe uses 1 tbsp)
pinch of salt
4 cups original cornflakes

  1. Preheat oven to 300° F. Place cornflakes in a deep tray. Line a baking tray with lots of mini baking cups.
  2. Melt butter, sugar, honey and salt in saucepan on low heat until sugar dissolves and mixture becomes frothy.
  3. Pour butter mixture gradually to the cornflakes. Stir quickly and gently to coat evenly.
  4. Spoon coated cornflakes into mini baking cups and bake for 10 minutes. Let cool on the tray then store them in air tight container.
